Eggnog Truffles

Ingredients

10 large egg yolks

1/4 cup granulated sugar 

1/4 teaspoon ground cinnamon 

1/4 teaspoon ground nutmeg 

1/4 teaspoon rum 

1/4 teaspoon pure vanilla extract 

1/2 cup confectioners' sugar 

Vegetable oil, for rolling 

Gold sanding sugar, for decorating 

Directions

  1. Bring a large saucepan of water to a simmer over medium heat. Set a heatproof bowl over the water (do not let the bowl touch the water). Add the egg yolks, granulated sugar, cinnamon, nutmeg, rum and vanilla. Whisk to combine, then cook, stirring often, until very thick and glossy, about 25 minutes. Let cool completely.
  2. Add the confectioners' sugar to the egg mixture. Beat with a handheld mixer until thoroughly combined. With oiled hands, roll the mixture into 3/4-inch balls. Roll the balls in gold sugar. Serve at once.

Mixed exactly as directed in recipe the batter is too runny. No way to roll into balls….think very, very soft play dough that doesn’t hold its shape. Added another 1/4 cup of powdered sugar to help fortify the “dough” and am now putting in refrigerator to see if it’ll set up firmer. Not sold on this recipe.
