Everything Bagel Cottage Cheese Bowls

If you can’t get enough of the everything bagel seasoning trend, this satisfying bowl is for you. We surround creamy cottage cheese with colorful roasted cherry tomatoes, sliced cucumbers and radishes, then top it off with a sprinkle of everything bagel seasoning. And for extra crunch, homemade everything bagel chips are served on the side for garnishing, dipping or spreading.

Ingredients

Two 10-ounce containers cherry tomatoes (about 3 cups)

1/4 cup olive oil

Kosher salt and freshly ground black pepper

1 unsliced everything bagel (about 5 ounces)

One 24-ounce container 4% milkfat cottage cheese

2 Persian cucumbers, very thinly sliced

2 radishes, very thinly sliced

1 1/2 teaspoons everything bagel seasoning

Directions

  1. Put a baking sheet in the oven and preheat to 450 degrees F.
  2. Toss the cherry tomatoes with 2 tablespoons of the olive oil, 1/2 teaspoon salt and several grinds of pepper in a large bowl until combined. Transfer to the hot baking sheet. Bake until just starting to burst and turn brown, 15 to 18 minutes. Set aside.
  3. Turn the oven to broil.
  4. Lay the bagel flat on a cutting board. Using a serrated knife, cut into 1/8-inch-thick slices. Transfer to another rimmed baking sheet and brush the pieces with the remaining 2 tablespoons olive oil. Broil until golden brown and toasted, about 1 minute per side.
  5. To serve, divide the cottage cheese, roasted tomatoes, cucumbers and radishes among shallow bowls. Sprinkle with the everything bagel seasoning and serve with the bagel chips.
