Sunny's Cottage Cheese Fruit Bowl

I love a quick snack that makes me feel like I did something. I tend to keep cottage cheese around because it's great with something savory or sweet. Here, I grill some fruit and make a quick syrup to go with it and other times I simply crack some black pepper over the top and add scallions. This is perfect for a toppings bar with family or guests.

Ingredients

Syrup:

1/2 cup orange juice

1/4 cup fresh lemon juice

1/4 cup fresh lime juice

1/2 cup agave nectar

Pinch kosher salt

Fruit:

Canola oil, for brushing grill

2 to 3 cups watermelon chunks (about 2-inch)

1 navel orange, peel removed with a knife, sliced into 1-inch-thick rounds

Assemble:

One 24-ounce container cottage cheese

Toasted almond slices, optional

Toasted pecans, hand-crushed, optional

Toasted walnuts, hand-crushed, optional

Freshly ground black pepper

Directions

  1. Make the syrup. In a small pot, add the orange juice, lemon juice, lime juice, agave nectar and a pinch of salt. Cook over medium heat until the liquid reduces and thickens, 45 minutes to 1 hour. Pour into a container and chill.
  2. Grill the fruit. Preheat a grill or grill pan over medium-high heat. Brush the grill grates or grill pan with a little bit of canola oil. Place the watermelon chunks and orange slices on the grill and grill until lightly charred and grill-marked, 2 to 3 minutes per side. Remove and let cool to room temp.
  3. Assemble the bowl. Add about 3/4 cup of cottage cheese to each serving bowl. Top with grilled watermelon and grilled orange. Top with the almonds, pecans and walnuts if using. Drizzle with the chilled syrup and sprinkle a grind of pepper on top. Serve.

I can’t remember the last time I had cottage cheese, but this recipe was right on time as I’m trying to eat healthier. I toasted pecans, walnuts, and slivered almonds. Of note: do not step away from your citrus agave syrup as my heat was a bit too high and it went from loose to a thick, burnt citrus sticky mess in no time haha! I ended up squeezing half of a small orange over top followed by drizzle of agave and it was still delicious! Love me some Sunny!
