Grilled Bourbon Onions

Ingredients

2 large sweet onions, such as Vidalia, sliced into 1/2- to 3/4-inch-thick rounds

Vegetable oil, for brushing

Kosher salt and freshly ground pepper

1/2 cup bourbon

2 tablespoons ketchup

1 tablespoon packed dark brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon balsamic vinegar

Directions

  1. Preheat a grill to medium. Brush the onions with vegetable oil on both sides and season with salt and pepper. Grill, covered and turning occasionally, until tender and charred, 15 to 20 minutes; roughly chop.
  2. Combine the bourbon, ketchup, brown sugar and Worcestershire sauce in a large skillet. Simmer over medium-high heat until the sauce has thickened and the alcohol has burned off, about 3 minutes. Stir in the balsamic vinegar and add the onions. Season with salt and pepper. Serve warm or at room temperature.

These onions were delicious. I served them on hoagie rolls with grilled pork sausage rings. The only modifications I made were I cooked these in a sauté pan (grill was out of gas) and I used Jack Daniels Honey Whiskey since it’s what I had. Absolutely delicious. My family loved them and asked me to make them again when we grill brats.
