This lemon-and-herb vinaigrette gets a touch of sweetness from honey and works beautifully with almost any salad.

Ingredients

1/4 cup freshly squeezed lemon juice (from about 2 lemons)

2 tablespoons chopped fresh herbs

1 tablespoon honey

Kosher salt and freshly ground black pepper

3/4 cup extra-virgin olive oil

Directions

  1. Whisk together the lemon juice, herbs, honey and a generous pinch of salt in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in a couple of turns of freshly ground black pepper.

Delicious dressing! For the herbs, I used just basil which paired well with the lemon juice. I like to put apples, grapes and craisins in my salads, and this dressing complimented those sweet flavors. Our guests raved about it! I'll definitely make it again! Oh - and it tastes great drizzled over grilled chicken too. Yum!
