Individual Turkey Meatloaves

Treat each guest to a personal meatloaf made with ground turkey, panko and a sweet-and-spicy glaze.

Ingredients

Nonstick cooking spray

1 medium carrot

1 large garlic clove

1 1/2 pounds ground turkey

3/4 cup panko breadcrumbs

2 tablespoons chopped fresh flat-leaf parsley

1 teaspoon chopped fresh thyme leaves

1/2 teaspoon smoked paprika

2 large eggs

1 scallion, chopped

Kosher salt and freshly ground black pepper

1/2 cup chili sauce

2 teaspoons dark brown sugar

Directions

  1. Preheat the oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray.
  2. Grate the carrot and garlic on the small holes of a box grater into a large bowl. Add the ground turkey, breadcrumbs, parsley, thyme, paprika, eggs, scallions, 1 teaspoon salt and 1/2 teaspoon pepper. Mix with your hands until just combined.
  3. Divide the mixture into 6 even portions and form each into a small loaf shape on the prepared baking sheet. Mix the chili sauce and brown sugar in a small bowl and brush over the loaves. Bake until just cooked through, 20 to 25 minutes.
