Lemony Hearts of Palm Salad

Directions

  1. Soak 1/4 cup sliced red onion in cold water, 10 minutes; drain. Toss with 2 cups sliced hearts of palm, 1 cup sliced celery and some chopped parsley. Add 3 tablespoons each lemon juice and olive oil. Season with salt and pepper. Serve over arugula drizzled with olive oil.

Loves nature

This salad is such a delicious, light change from the usual. It's lemony, crunchy, peppery & has nice flavor. I had herbs to use so made it with a mix of fresh parsley, cilantro & mint.  I don't think you have to drizzle the arugula with oil, as there was plenty of tasty dressing.
