Matcha-Almond Croissants

Ingredients

2/3 cup almond flour

6 tablespoons granulated sugar

2 tablespoons all-purpose flour

1 1/2 teaspoons culinary-grade matcha, plus more for topping

1/8 teaspoon salt

1 tablespoon unsalted butter, melted

1 large egg, plus 1 egg white

1/2 teaspoon almond extract

4 croissants, halved horizontally

1/2 cup sliced almonds, toasted

Confectioners’ sugar, for topping

Directions

  1. Preheat the oven to 350˚ F. Whisk the almond flour, granulated sugar, all-purpose flour, matcha and salt in a bowl. Stir in the melted butter, whole egg and almond extract until combined. Spread the mixture on the cut side of each croissant bottom.
  2. Arrange the croissant bottoms matcha-side up and the croissant tops cut-side down on a baking sheet. Beat the egg white and brush on the croissant tops, then sprinkle with almonds. Bake until the matcha mixture looks dry and puffs slightly, 10 to 12 minutes. Place the croissant tops on the bottoms, then dust with more matcha and confectioners’ sugar.
