Matzo Ice Cream Sandwiches

These old-school ice cream sandwiches have a secret ingredient: matzo! These sandwiches make the perfect treat for Passover -- but they're so good, you might want to have them year-round.

Directions

  1. Break a sheet of matzo into squares, dip in melted chocolate and freeze on a parchment-lined baking sheet until set. Sandwich scoops of vanilla ice cream between the dipped matzos and return to the freezer until firm.
