Air Fryer Mozzarella Sticks

I tripled this recipe and froze some of the breaded cheese — now I can have warm, gooey mozzarella sticks whenever I want!

Ingredients

1/2 cup all-purpose flour

2 large eggs, lightly beaten 

1 cup seasoned breadcrumbs 

Kosher salt 

6 mozzarella cheese sticks

Cooking spray

Marinara sauce, for serving

Directions

  1. Place the flour, beaten eggs and breadcrumbs in three separate shallow bowls. Season the flour and breadcrumbs with 1 teaspoon salt each.
  2. Line a baking sheet with parchment paper. Cut the cheese sticks in half crosswise; dip in the flour, then egg, then breadcrumbs. Repeat to coat each again in the flour, egg and breadcrumbs. Transfer to the prepared baking sheet; freeze 2 hours. 
  3. Preheat a 6-quart air fryer to 400˚ F. Coat the breaded cheese with cooking spray. Add to the air fryer basket in an even layer and cook, turning halfway through, until crisp and golden, about 6 minutes. Serve with marinara sauce.

I think the technique of preparing these is on point but next time I might reduce the salt to a pinch or eliminate it altogether. The cheese sticks are probably salty, to begin with, and all I could taste was salt when I at them. I also thought 6 minutes was too long for the air fryer. When I turned them at 3 minutes they looked great but by 6 minutes they were losing cheese fast. I think four minutes total might suffice.
