Onion Hummus

Two types of dried onion are used to add sweet, earthy flavors onto this creamy dip ready in less than 10 minutes.

Ingredients

3 cups canned chickpeas, drained and rinsed, 1/2 cup liquid reserved

2 to 3 cloves garlic

1/4 cup tahini

1/4 cup fresh lemon juice

1 1/2 teaspoons dried minced onion

1 1/2 teaspoons onion powder

1 1/2 teaspoons granulated garlic

Kosher salt

Optional: Olive oil for drizzling

Directions

  1. Put the chickpeas, chickpea liquid, garlic, tahini, lemon juice, dried onion, onion powder, granulated garlic and 1 teaspoon salt in a food processor. Puree until smooth and creamy. Serve drizzled with olive oil if using.

Where is the sour cream?  Well, when you add up all the ingredients the total is 3 cups, 13 tablespoons.  Therefore, use 3 tablespoons sour cream to reach the 4 cup yield.  Add the reserved liquid to achieve the consistency you like.  Simple math!
