Peachy-Keen Smoothies

Ingredients

2 ripe peaches, halved, pitted and cut into chunks (with skins)

1 cup 2% or 4% cottage cheese

1/2 cup reduced-fat milk

3 to 4 tablespoons honey

2 tablespoons fresh lemon juice

Salt

Pinch of freshly grated nutmeg, plus more for sprinkling

Directions

  1. Puree the peaches, cottage cheese, milk, honey, lemon juice, a pinch of salt, the nutmeg and 2 cups ice in a blender until smooth, 2 to 3 minutes. Divide among glasses and sprinkle with more nutmeg.

I've never been a huge fan of peach flavored items. Like most people, I usually opt for the usual things-- strawberries or bananas. This has absolutely converted me! The trick is to be generous with the nutmeg and to keep tasting it until it's just right. For a little more, I added a teaspoon of vanilla, a sprinkle of cinnamon, and a sprinkle of ginger. All the spices make you think you're drinking something decadently bad for you when it's not. If you prefer more of peach flavor, you can add more peaches, but I enjoy it, as is. To top it off, the kids asked if I could make more tomorrow. Yay to healthy but fulfilling breakfast!
