Pickled Red Onions

Sweet-and-tangy quick pickled onions are a go-to condiment for burgers, tacos, salads or sandwiches—basically anywhere you need a pop of flavor and some bright color. And talk about easy: You’ll need just four pantry ingredients, and your pickles will be ready in minutes, no long brining, chilling or canning required.

Ingredients

1 medium red onion, halved and thinly sliced (about 2 cups)

1/4 cup apple cider vinegar

2 tablespoons packed light brown sugar

1/2 teaspoon coriander seeds, lightly crushed

Kosher salt and freshly ground black pepper

Directions

  1. Put the onions in a medium bowl. Combine the vinegar, sugar, coriander, 2 teaspoons salt and a few grinds of pepper in a small saucepan and bring to a simmer over medium heat. Cook until the sugar dissolves, about 1 minute. Pour the mixture over the onions, cover and set aside until cooled to room temperature.

I made this and thought I was going to be the only one to eat them but my family loved the pickle onion so I make them all the time. I do canning so I’m going to try to canned them so they will stop worrying me so 😆. I usually don’t write a review so I really like this
