Spiked Candied Bacon

Soak bacon in tequila, and then roast it with brown sugar, chili powder and chipotle chile powder.

Ingredients

1 pound sliced bacon

1 cup tequila

1 cup packed light brown sugar

1/2 teaspoon chili powder

1/2 teaspoon chipotle chile powder

Directions

  1. Combine the bacon and tequila in a large bowl and refrigerate at least 2 hours or up to 8 hours.
  2. Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment. Drain and pat the bacon dry. Mix the brown sugar, chili powder and chipotle together and spread out on a large plate. Press both sides of each bacon strip in the sugar mixture and then arrange on the prepared baking sheets. Sprinkle with any remaining sugar mixture.
  3. Bake for until the bacon is golden and glazed, turning once, 30 to 35 minutes. Transfer to a wire tack to cool.
