Three-Ingredient Cookies

These unbelievably easy -- and gluten-free -- cookies have only three ingredients and are a great way to use up those extra mixed nuts hanging out in your pantry.

Ingredients

2/3 cup roasted and salted deluxe mixed nuts

1 large egg white

1/2 cup sugar

Directions

  1. Position a rack in the center of the oven and preheat to 300 degrees F. Line a baking sheet with parchment.
  2. Pulse the nuts in a food processor until coarsely chopped.
  3. Beat the egg white in a medium bowl with an electric mixer until stiff peaks form, about 2 minutes. Gently fold in the sugar and nuts. Spoon leveled tablespoons of the batter onto the prepared baking sheet, about 12 cookies total.
  4. Bake, rotating halfway through, until golden brown, 25 to 30 minutes. Let cool completely on the baking sheet set on a wire rack.

Very good. Love that it is gluten free. Nutty crunchy cookie. You get the flavors of all the nuts. Easy to make. I will decrease sugar to 1/3 cup next time.
