- Peel and trim 8 bunches baby rainbow carrots (about 3 pounds). Toss with 2 tablespoons olive oil, 3 thinly sliced shallots and 1 teaspoon chopped fresh thyme on a rimmed baking sheet; season with salt and pepper. Roast at 425 degrees F, turning once, until tender, about 30 minutes.
