Walnut-Lavender Wedges

Directions

  1. Make Classic Shortbread dough, adding 3/4 cup finely ground walnuts with the flour. Sprinkle 1/2 teaspoon dried lavender over the dough before baking. Slice into wedges.

Yep, I admit it. I had my doubts. Lavender? Seriously? I put Lavender in my sock and underwear drawer to make things smell good! But, I put my hesitation aside and gave these a try. I'm now a convert. The dang things were good! And not just good like, okay. Good, like really tasty, with that special something that you just can't quite identify. I didn't bother making mine into wedges. I just cut them into squares. Forgive me baking gods! I grew Lavender on the patio (I sure wasn't buying expensive lavender for this in the store) and put the almost opened flower buds in a cup to dry for a week. Then I ground them up with a mortal and pestle and sifted that through a strainer to keep out the gnarly bits. I sprinkled that on top of the dough, being careful not to go over the 1/2 tsp. I figured it was a small amount for a reason. Didn't want my cookies tasting like sachets. I pressed it into the dough, crossed my fingers and baked. At first, when I smelled the cookies, I was unsure. Smelled a little too flowery for me. But, I gave them a try. The walnuts in the dough really added a nice texture and flavor. The Lavender gave them just the right high note, that something you just can't put your finger on. Really lovely! These are now one of my favs!
