  1. Cook 3 slices chopped thick-cut bacon in a skillet until crisp. Remove with a slotted spoon to paper towels; whisk 2 tablespoons of the drippings with 1 diced small shallot, 1 teaspoon dijon mustard, 3 tablespoons white wine vinegar and 2 tablespoons water. Toss with one 5-ounce bag baby spinach, 1 cup halved red grapes and 1/2 cup pistachios; season with salt and pepper. Top with 1/4 cup crumbled blue cheese and the bacon.

LOVED this salad!! I'm a fan of acidic salad dressing and the dressing for this salad fit the bill. I made the dressing a few hours ahead of time and had to microwave it for 20 sec. before pouring over the salad as it had partially solidified. The dressing had a ton of flavor. I burned the pistachios while trying to roast them and had to replace with walnuts instead. I used baby romaine instead of spinach. I served this at a dinner party and everyone devoured it! Will make this again for sure.
