Fresh Tomato and Feta Salad

Ingredients

Dressing:

3 tablespoons balsamic vinegar

1 teaspoon chopped fresh oregano 

1/2 teaspoon honey 

1/2 teaspoon kosher salt 

1/4 teaspoon freshly ground black pepper 

1/4 cup extra-virgin olive oil 

Salad:

2 beefsteak tomatoes (or large heirloom if available), sliced 1/2-inch-thick

1 small red onion, diced 

1 cup crumbled feta

2 tablespoons fresh mint leaves 

1 tablespoon fresh parsley leaves 

8 fresh basil leaves, torn 

Directions

  1. For the dressing: In a small bowl, whisk together the balsamic, oregano, honey, salt and pepper. Slowly whisk in the extra-virgin olive oil until combined.
  2. For the salad: Arrange the sliced tomatoes on a platter. Scatter over the onions and feta. Drizzle with the dressing, then top with the mixed herbs.
