Fried Zucchini

Ingredients

1 pound zucchini, cut into shapes of choice (wedges or rounds, etc.)

1 cup buttermilk

1/2 cup flour

1/2 cup cornmeal

Salt and pepper to taste

Peanut oil for frying

Directions

  1. Mix flour and cornmeal, set aside. Soak zucchini in buttermilk for at least one hour. Coat in flour mixture. Deep fry until golden brown.

I followed one reviewer's advice and soaked zucchini in a gallon zip loc bag. After the soaking time, I put the cornmeal and flour, salt and pepper in the same bag. Easy, crunchy and delicious!
