Frogmore Stew

Ingredients

3 tablespoons shrimp and crab boil

3 tablespoons salt

1 1/2 gallons water

2 pounds hot smoked link sausage, cut into 2-inch pieces

12 ears freshly shucked corn, broken into 3 to 4-inch pieces

4 pounds fresh shrimp

Directions

  1. In a large stockpot, add the shrimp boil and salt to the water and bring to a boil. Add the sausage and boil, uncovered, for 5 minutes. Add the corn and count 5 minutes. Add the shrimp and count 3 minutes. Do not wait for the liquid to come to a boil when timing the corn and shrimp. Drain immediately and serve.

Cook’s Note

This is an easy way to feed a crowd, and it's absolutely delicious if you have fresh shrimp and corn and don't overcook them. If they don't make spicy smoked sausages in your neck of the woods, use any smoked sausage such as kielbasa and add some crushed red pepper to the recipe.

This recipe was begun in the little town of Frogmore, South Carolina. ( yes! There is a place!) On the way to the outer islands, outside of Beaufort, South Carolina. It's where the shrimp boats come in every afternoon.<br />Our family love this huge pot meal, when there was a crowd to feed. Old bay has a mesh bag that is filled with spices, and you will want to use that, several gallons of water , lemon juice then the empty squeezed lemons, kielbasa sausage cut into 2 inch rounds, vidalia onions 2 medium whole, fresh corn, 4/6 broken into thirds, so the cobs are small,1 1/2 lbs small whole baby red potatoes, a couple cans of a stout beer, (drink some, cook some) 4 or 5 cloves of garlic, couple bay leaves... and you have the basic brew! At the very end of boiling... you add couple pounds of fresh shrimp, shells on...Three minutes( and yes, set a timer) <br />You can add any type of shellfish that appeals to you, ( but remember, these foods are very delicate, and require VERY little cooking time)<br />We just used shrimp, but like I said.... what ever your family loves.<br />The boil/stew needs to be cooked in order, as some foods take longer to cook. ; Spice the water with all flavorings.. boil 10 mins alone,next. Potatoes and onions... 20 mins.... next kielbasa 8 mins, next... corn 5/6 mins (covered). Then LAST... shrimp... exactly 3 mins.<br />Drain ( can keep stock and reuse), cover a picnic table with newspaper, dump that big pot out! Melt butter ( mix with either hot sauce or fresh lemon) serve in giant soup bowls, wear a bib, your gonna slosh... grab a really cold beer, and turn the music up, ENJOY!!!
