No-Cook Chocolate Coconut Budino

Ingredients

3/4 cup unsweetened almond milk

3/4 cup coconut yogurt, such as COYO (dairy-free preferred)

1/4 cup good quality unsweetened cocoa powder

3 tablespoons pure maple syrup

1 teaspoon pure vanilla extract

Pinch of kosher salt

1/3 cup chia seeds

Chopped chocolate covered almonds and whole raspberries to serve

Directions

  1. In a medium bowl whisk together the almond milk, coconut yogurt, cocoa powder, maple syrup, vanilla and salt. Stir in the chia seeds. Cover and refrigerate for at least 6 hours or until thickened to the consistency of pudding. Serve topped with the chocolate almonds and raspberries.

This was GREAT!!! Not too sweet, just enough chocolatey goodness. Key, I think, is excellent quality cocoa powder and good coconut yogurt.
