Panettone Trifle

Ingredients

1 pound mascarpone cheese, at room temperature

8 ounces bittersweet or semisweet chocolate, melted

1/2 cup powdered sugar

2 teaspoons espresso powder

1/4 cup coffee liqueur

12 ounces panettone, cubed

Chocolate shavings, for garnish

Directions

  1. To make the trifle: Using an electric mixer, beat the mascarpone, melted chocolate, powdered sugar, and espresso powder in a large bowl until smooth and fluffy.
  2. Divide half of the panettone cubes among 6 wine glasses or old-fashioned glasses. Sprinkle half of the coffee liqueur over the panettone. Top with half of the mascarpone mixture. Repeat layering with the remaining panettone, liqueur, and mascarpone mixture. (The trifles can be prepared 1 day ahead, covered and refrigerated. Let come to room temperature before serving.)
  3. To serve, sprinkle with the chocolate shavings. Serve immediately.

I have made this every year, but decided in the summer I wanted to make it. I bought an angel food cake broke that up, then layered some fresh strawberries that I had sliced and sugared, and then chocolate and then repeated ending with chocolate and a pretty strawberry on top. Since then I have tried frozen strawberries, frozen raspberries, and even used unsweetened strawberry or raspberry jam. My friend layered the angel food cake, sprinkled with rum, sliced bananas, jarred caramel sauce and the chocolate...wow she said it tasted like bananas foster. I have shared this recipe with so many and so many different versions, using any kind of pound cake or firm cake. Either way I have had it my husband is always wanting me to make it. The chocolate is what he loves the best and I am going to try making the chocolate and incorporating whatever I need to make it mousse. <br />
