Green Beans with Cherry Tomatoes

I love the simplicity of this gorgeous vegetable side dish. The cherry tomatoes add pops of color and create a sweet sauce once they burst in the skillet. The caramelized onions also add another dimension of flavor.

Ingredients

2 tablespoons unsalted butter

2 tablespoons olive oil

2 Vidalia onions, halved and sliced

2 pounds fresh green beans, trimmed

2 pints multicolored cherry tomatoes

1/4 cup chicken or vegetable broth

Kosher salt and freshly ground black pepper

Directions

  1. Melt the butter and oil together in a large cast-iron skillet over medium-high heat until hot. Add the onions and cook until browned and caramelized, about 10 minutes.
  2. Add the green beans, tomatoes and broth. Sprinkle with salt and pepper. Bring to a boil. Cover, reduce the heat and simmer until the green beans are crisp-tender and the tomatoes begin to burst, 13 to 15 minutes.

These green beans were amazing! I did add a little better than bouillon with the chicken broth. It just gave it a little more yumminess.
