Grilled Herb Bison Tri Tip Roast

Ingredients

One 3 lb. Bison Tri Tip Roast (fresh or fully thawed)*  (See Cook's Note)

2 tbsp. olive oil for searing

To make the Spice Rub:

2 tbsp. minced garlic

2 tbsp. minced fresh rosemary

2 tbsp. ground coriander

1 tbsp. sweet Hungarian paprika

1 tbsp. celery seed

1 tbsp. ground mustard

1 tbsp. cracked pepper

1 tbsp. kosher salt 

Directions

  1. Brush olive oil over all sides of the roast.
  2. In a small bowl combine all spice ingredients.
  3. Rub the mixture over the roast, covering completely.
  4. Wrap the roast in plastic wrap and chill for at least an hour or up to 24 hours if you have time.
  5. Pre heat BBQ to medium high.
  6. Place the roast on a lightly oiled grill in the center of the BBQ. Close the lid.
  7. Grill for 15 minutes, turn over and grill for additional 15 minutes, for a total of 30 minutes of grilling time.
  8. Remove roast to carving board. Loosely tent with foil and let stand for 15 minutes to let the juices settle.
  9. Carve into strips with the grain.

Cook’s Note

This recipe will also work with a Bison Sirloin Tip roast.
