Ingredients

Sugar

Maldon sea salt

1 ounce tequila

1/2 ounce lemon juice

1 sea urchin fillet

Directions

  1. Combine equal parts sugar and water and simmer for 20 to 30 minutes. Cool. 
  2. Line a pousse-cafe (shooter) glass with salt. 
  3. Combine the tequila, lemon juice and 1/2 ounce simple syrup in a cocktail shaker. Shake. 
  4. Serve over the sea urchin fillet in the prepared glass.
