Ingredients
32 soft, uniform size cookies
1 qt. vanilla ice cream
2 cups various fillings such as maple nuts, dried fruit, crushed candy bars, etc.
Directions
- In a bowl combine several spoonfuls of ice cream with your favorite fillings. Work together with two spoons and work with small batches so it doesn't melt on you. Place and even layer of ice cream on top of bottom layer of cookie and then top with another cookie.
- Place cookie immediately in a freezer. Repeat until all cookies are done. Allow cookies to set in freezer at least two hours.

If you're pressed for time, try getting store-bought ice cream sandwiches and rolling them in chocolate chips or nuts!
