Stewed Fruit with Ice Cream

Ingredients

1/4 golden pineapple, peeled and large-diced

3 half-pints fresh raspberries, divided

2 half-pints fresh blueberries

1 1/2 cups sugar

3/4 cup water

2 tablespoons framboise (raspberry brandy), optional

2 pints good vanilla ice cream

Directions

  1. Place the pineapple in a medium saucepan, then add 2 half-pints of raspberries, all the blueberries, the sugar, and 3/4 cup water in a saucepan and bring to a boil. Lower the heat and cook uncovered over medium-low heat, stirring occasionally, for 5 to 7 minutes. The juice will become a syrup and the berries will be slightly cooked. Off the heat, stir in the remaining half-pint of raspberries and the framboise, if desired. Set aside until warm.
  2. Place about 3/4 cup of fruit in each bowl and top with a scoop of ice cream.

I have never posted a review before and can not believe that there are so few for this one. I had been wanting try this one for awhile and I just have to say. WOW. My family went overboard. The compliments were out of this world. Even the guys described it as an aphrodisiac , one even said he needed a cigarette after eating it. And I have to just point out that this was for my husbands very picky family. <br />The simplest dessert with the best results. I did Strawberries, blueberries and raspberries. We left out the alcohol because there were a lot of kids that night but I can't wait to try it with. <br />Definitely try this one!!!!
