Jamaican Rummed Baked Bananas

If you want a real Jamaica treat, there is nothing that beats rummed bananas. My friend Virginia Burke introduced them to me in the hills above Ocho Rios. She baked them on a traditional jerk pit. Ingredients

4 ripe bananas, peeled

4 tablespoons brown sugar

4 teaspoons butter, in small pieces

1 cup orange juice

1 tablespoon dark rum

4 tablespoons coconut cream or ice cream, to serve

Directions

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. In a greased baking dish, place the bananas. Sprinkle with sugar and dot with butter. Mix orange juice and rum and pour around the bananas. Bake for 20 minutes.
  3. Serve with a dollop of coconut cream or ice cream.

I thought I would like this recipe, as I do like Banana's Foster, and thought this sounded similar. I could not eat the bananas at all.... very nasty tasting. My husband, on the other hand, did like it. I'm not sure it's something he'd ask me to fix again, but he did manage to get it down and say it was good. I even tried putting it over a slice of pound cake with vanilla ice cream. I just didn't care for it.
