Yogurt, Mint and Lime Marinade

Ingredients

1 pint natural organic yogurt

2 good handfuls of fresh mint, chopped

2 limes, zested and juiced

1 tablespoon coriander seeds, crushed

Salt and freshly ground black pepper

A couple of lugs (2 tablespoons) olive oil

Directions

  1. Mix together the ingredients and smear over your chosen meat before leaving it to marinate.;

What a wonderful, light flavor to add create the best flavor in whatever you would choose to marinate - I chose lamb. Mint is one of those herbs that really can enhance meet while remaining subdued. I also love to use it in couscous and bulgur wheat salads. <br />A naturally basic, but excellent recipe. <br />Once again, that British boy knows how to cook.
