Ingredients
1 cup chorizo, sliced into 1/2-inch thick pieces
1/2 cup red onion, diced
2 tablespoons jalapeno, finely diced
1/2 cup red bell pepper
8 eggs
1/2 cup milk
1/2 teaspoon sea salt
1 teaspoon pepper
2 (9-inch) flour tortillas
1/4 cup shredded jack cheese
1/4 cup shredded Cheddar
1/2 cup scallions, diced
Directions
- Pre heat oven to 375 degrees F.
- In a skillet over high heat, cook chorizo. When the sausages are almost cooked through, add the onion, jalapeno, and pepper and saute until vegetables are soft. Remove chorizo mixture to a bowl and let it cool.
- In medium bowl, mix eggs, milk, and salt and pepper. Add the chorizo mixture to the egg mixture.
- Spray nonstick cooking spray on a pie pan, place 1 tortilla and pour the egg/chorizo mixture into the pan. Bake for 15 minutes. Remove from oven, top with another tortilla and the shredded cheeses and bake for another 5 minutes.
- Remove from oven and garnish with scallions. Serve immediately.
