Lemony Herb Shrimp Scampi

To me, there's nothing that tastes more like home than sweet Charleston shrimp. This simple recipe celebrates my beloved ingredient with lemon, tomatoes, lots of garlic and some herbs.

Ingredients

2 tablespoons salted butter

2 tablespoons olive oil

4 cloves garlic, minced

1/2 cup dry white wine

1 1/2 pounds large fresh shrimp, peeled and deveined

2 tablespoons lemon juice

1/4 teaspoon crushed red pepper

2 tablespoons chopped fresh parsley

1 tablespoon fresh thyme

1 large tomato, diced

Directions

  1. Heat the butter and oil in a large skillet over medium heat until the butter melts. Add the garlic and cook until fragrant, about 45 seconds. Add the wine to deglaze the skillet. Add the shrimp, lemon juice and crushed red pepper. Cook until the shrimp begin to turn pink.
  2. Add the parsley, thyme and tomato and cook until the shrimp are cooked through and the tomatoes are tender, about 2 minutes. Serve immediately.

I’ve made this twice now. Excellent! Don’t skimp on the herbs or lemon. I added some lemon zest.
