Mahi-Mahi Burrito

Ingredients
4 ounces mahi-mahi, rubbed with your favorite blackening seasoning
Vegetable or olive oil, for cooking
4 ounces spinach
1 teaspoon minced garlic
4 ounces rinsed canned black beans
4 ounces Pineapple Salsa, recipe follows (store-bought is also fine)
1/2 avocado, sliced
2 ounces Chipotle Sour Cream, recipe follows (store-bought is also fine)
One 12-inch flour tortilla
Pineapple Salsa:
2 jalapeños, seeded and diced
1 red bell pepper, seeded and diced
1 small red onion, diced
1 pineapple, diced
1 small bunch fresh cilantro, chopped finely
Juice of 1 lime
Chipotle Sour Cream:
16 ounces sour cream
3 chipotles in adobo
Salt and pepper
Directions
- Add the mahi-mahi to a HOT oiled pan over medium-high heat and sear until cooked through, about 3 minutes on each side. Set aside.
- Prepare another oiled pan and heat over medium heat. Add the spinach and garlic and sauté to your liking, 2 to 3 minutes. Layer the mahi-mahi, spinach, black beans, Pineapple Salsa, avocado and Chipotle Sour Cream in the center of the tortilla and roll into a burrito.
Pineapple Salsa:
- Mix together the jalapeños, bell pepper, onion, pineapple, cilantro and lime juice in a large bowl. Cover and refrigerate until ready to use.
Chipotle Sour Cream:
- Mix together the sour cream, chipotles and salt and pepper in a small bowl, then cover and refrigerate until ready to use.
