Mannish Water

Ingredients

2 pounds goat head, organs and feet (2 pounds lamb meat may be substituted)

1 1/2 gallons water

5 green bananas, sliced

1 pound yams, diced

1 1/2 christophenes (also called chayotes), seeds and skin removed, chopped

1/2 pound taro root, diced

1/2 pound carrots, diced

1/2 pound turnips, diced

1 1/2 bunches scallions, chopped

2 scotch bonnets or habaneros, chopped

3 sprigs fresh thyme, chopped

Salt

Directions

  1. Chop the meat into small pieces, rinse and place into a large stockpot. Add the water and bring to a boil. Reduce the heat and simmer 3 hours, until the meat is tender.
  2. Add the remaining ingredients and cook until the vegetables are tender. Season with salt and serve.

Outstanding from Miami Beach! Thank you SANDALS!!! i used 3lbs of bone in goat meat. I asked the butcher to cut it up into medium chunks. I could not find taro root or believe it or not turnips! I used 4 kinds of malanga. FYI! Be sure to use gloves to peel it all especially the chayote which dried my skin where even my nail tech asked what happened to my skin it was so bad. I used organic chicken stock and a spot of beef stock paste in place of the water. I chunked it all!, forget the dicing - I knew it would be cooking and getting reheated. It all melted into the soup. I added a red onion and extra thyme and 2 bay leaves, 2 tbs of salt to taste. I am in heaven.I can't find the bonnets to remove them even though I have put them in a gazillion single serve containers for giving and freezing.
