Mashed Plantains with Chorizo: Fufu

Ingredients

6 very ripe plantains, peeled and cut into 1-inch pieces

5 cups water

1 cup milk

1 tablespoon ground turmeric

Salt and freshly ground black pepper

Canola oil

2 cups chorizo, small dice, (recommended: Goya)

Mojo, for serving, (recommended: Goya)

Directions

  1. Put the plantain pieces a pot large enough to hold them, and add water and milk. Add turmeric and season with salt and pepper. Bring to a boil, lower the heat and allow to simmer for 20 minutes. Drain and mash through a ricer. 
  2. Lightly coat a separate pan with canola oil. Add chorizo and saute for 5 minutes over low heat. Add pureed plantain and mix well. 
  3. Serve with the Mojo.

Definitely make sure your plantains are very ripe, black/brown almost, to ensure the subtle sweetness of this dish. The turmeric is pleasant and earthy. Don’t be afraid to salt and pepper! It requires a bit more salt that you might think. I didn’t try it with the chorizo or mojo, but served it with smoked brisket. What a nice change of pace from corn and potatoes! Bravo!
