Meatballs

Ingredients

2 pounds ground beef

1 medium-size white onion, chopped finely

1 medium-size red onion, chopped finely

Handful capers, chopped

1 1/2 cups bread crumbs

2 tablespoons chopped garlic

1 large egg

Salt and pepper

2 tablespoons chopped fresh parsley leaves

3 cups marinara sauce

1 cup red wine

Chopped parsley leaves

Grated Parmesan

Spaghetti, for serving

Directions

  1. Preheat the oven to 400 degrees F. 
  2. Meatballs: Combine all ingredients and mix well using both hands. Then shape into golf ball size pieces. Place into frying pan. Cover each ball with marinara sauce and pour 1 glass of red wine over the top. Bake for about 45 minutes, until cooked through. Finish with Parmesan cheese and fresh parsley. Serve with spaghetti.

These are absolutely my favorite meatballs. The only change I make is to cut the amount of onions in half - choose either the red or the white (either is fine). I love tht there's not this crazy process where you need to fry the meatballs then bake them. So easy, and they turn out tasty and moist. Not sure what kind of difference the red wine makes b/c I haven't tried making them without.
