Medieval Roasted Chicken

Ingredients

1 roaster chicken

2 cups water

1/2 cup paprika

1/2 cup granulated garlic

2 cups lemon juice

1/2 cup lemon pepper

1/4 cup Italian spice

2 teaspoons salt

Directions

  1. Preheat the oven to 325 degrees F. Combine all ingredients together to prepare the marinade. Dip the whole chicken in the marinade. Cover chicken completely with marinade. Let sit for 4 to 5 minutes. Place chicken on a sheet pan. Cook for 50 minutes uncovered, or until the chicken is cooked through and the juices run clear.

Not a completely terrible first attempt following the recipe exactly. My recommendations :<div><br /></div><div>- Smoked Paprika</div><div>- If your lemon pepper &amp; Italian seasoning don’t have salt? Infinitely more salt. </div><div>- Wet marinade would be brilliant flame broiled or grilled, roasted / baked it’s lacking... just missing some oomph. At the castle they do briefly set these suckers on fire. So that may be the missing piece to a wet marinade and roast. </div><div>- Baked or roasted using the spice mix as a dry rub</div>
