Grilled Mangoes with Herbs

Ingredients

3 ripe mangoes, peeled, pitted and sliced into 1/2-inch slices

Fresh verbena, mint, or another herb of your choice

Directions

  1. Preheat a grill.
  2. Grill mango slices over medium-high heat until just warmed through and slices begin to show grill marks, about 3 minutes per side. Turn mangoes once during cooking and cover with fresh verbena to let the heat of the grill warm the herbs.
  3. Toss the mango slices and herbs together gently. Serve immediately.

I made this for our 4th of July breakfast grill. I used peaches and it came out terrific! I bought a lemon verbena plant and this was the first time I used it in cooking. It imparted a mild lemon flavor and scent. Yum! I would make this again in a heartbeat.
