Mizuno greens with Miso Honey Vinaigrette

Ingredients

1 cup yellow miso paste

1/3 cup honey

1/3 cup rice wine vinegar

1 tablespoon soy sauce

1/3 cup grape-seed oil

Salt

1 pound Mizuno greens

Directions

  1. For the dressing:
  2. Combine the miso paste and honey in a large mixing bowl. Whisk in the rice wine vinegar and soy sauce. While whisking, add the olive oil in a slow stream; season with salt, to taste.
  3. Toss the Mizuno greens with desired amount of dressing.

This recipe was extremely salty, and I didn't add the salt called for. We were hoping it would be like the miso vinaigrette served in one of our favorite local restaurants as a dressing on a fennel/romaine salad. It has the same ingredients as their dressing, so I am going to try it again, decreasing the quantity of soy and miso.
