Olive Salad:

1 (13.4-ounce) bottle roasted red peppers, drained and coarsely chopped

1 (13.7-ounce) can quartered artichoke hearts, drained and coarsely chopped

1 cup kalamata olives, pitted and coarsely chopped

1/4 cup chopped yellow onion

2 tablespoons capers

1 tablespoon chopped fresh parsley leaves

ERIKA E.

I've had authentic muffaletta, and while it was tasty, it was almost too much. This recipe allows you to savor the distinctive taste without going into olive overload. My Fiance (who was born and raised in the south) absoloutely loves this recipe and requests Muffaletta Burgers for every BBQ!
