All-American Double Patty Cheeseburgers with Nancy's Special Sauce

Ingredients

1 tablespoon butter

2 potato burger buns

1/2 pound ground beef

Kosher salt and freshly ground black pepper

Vegetable oil, for the skillet

4 slices deli-style yellow American cheese

Nancy's Special Sauce, recipe follows

2 thin slices red onion

8 pickle chips

2 slices beefsteak tomato

1 large leaf iceberg lettuce, torn in half

Nancy's Special Sauce:

3 tablespoons mayonnaise

1 tablespoon ketchup

1 teaspoon yellow mustard

1 teaspoon pickle relish

1 teaspoon Sriracha

1 teaspoon white wine vinegar

Directions

  1. Heat a large cast-iron skillet over medium-high heat. Add the butter. When it foams, add the bread, cut-side down, and toast until golden brown, about 2 minutes. Transfer the bread to a platter.
  2. Sprinkle the beef with salt and pepper and mix it in, using your hands. Shape the ground beef into four patties. Flatten the patties between sheets of wax paper to a 3/8-inch thickness. (The patties will be 1 1/2 times larger than your palms; it's ok if the edges look ragged, since the burgers shrink up a bit while cooking.)
  3. Wipe the skillet lightly with vegetable oil using a paper towel. Add the patties to the skillet and cook on the first side for 3 minutes. Flip, season again, and cook for 2 minutes. Top each patty with a slice of American cheese and cook 1 minute more.
  4. Smear the toasted buns on both sides with some of Nancy's Special Sauce. Stack a burger patty on top of each bun, add a slice of onion, then top with a second patty, followed by the pickles, tomatoes and lettuce. Cover with the top buns and eat with a napkin!

Nancy's Special Sauce:

  1. In a bowl, stir together the mayonnaise, ketchup, mustard, relish, Sriracha and vinegar until well-combined.

I was short on some ingredients and substituted others and this was still fabulous. It’s an old-fashioned burger with a twist. Here’s what I used for the ingredients of mine so you know how forgiving the recipe is: In the Nancy’s Sauce, I subbed rice vinegar for white and chopped dill pickles for the relish. The rest of the ingredients were the same. For the burger, I used sourdough bread, provolone cheese, beyond meat plant based burger, no onion. My dog was hovering below me, hoping that something would fall, but the sandwich stayed together. Napkin still helpful, though, for drips.
