Noah's Kickin' Chicken Bake

Ingredients

2 cups diced cooked chicken

1/4 cup chopped green onions

1 cup chopped cooked broccoli

1/4 cup chopped yellow pepper

1/4 cup chopped red pepper

1/2 teaspoon minced garlic

1 1/2 cups Mexican blend shredded packaged cheese

1 cup sour cream

2 teaspoons Emeril's Southwest Spice, recipe follows

1 sheet frozen packaged puff pastry, thawed

1 egg, beaten with 1 tablespoon water

Emeril's Southwest Seasoning:

2 tablespoons chili powder

2 teaspoons ground cumin

2 tablespoons paprika

1 teaspoon black pepper

1 tablespoon ground coriander

1 teaspoon cayenne pepper

1 tablespoon garlic powder

1 teaspoon crushed red pepper

1 tablespoon salt

1 tablespoon dried oregano

Directions

  1. Preheat oven to 350 degrees F.
  2. In a bowl, combine all ingredients, except the puff pastry.
  3. Cut puff pastry into 8 equal triangles. Arrange triangles in a circle with the pointed end facing out.
  4. Spoon chicken mixture in a ring on top of the puff pastry triangles, leaving the points exposed. Fold the pointed ends over the chicken mixture, pressing the points down to seal. Brush with egg wash.
  5. Bake for 25 minutes until golden brown.

Emeril's Southwest Seasoning:

  1. Combine all ingredients thoroughly.

Like several other reviewers, I had some issues regarding how the puff pastry was supposed to be arranged and would love to see a picture. However, I thought the recipe was delicious. Even my husband, a man who won't touch a vegetable, enjoyed this dish so I was able to sneak some broccoli into his diet. <br /> <br /> I made the Emeril seasoning a bit less spicy than the recipe calls for because I am not a fan of spicy food. It was still incredibly flavorful with just a bit of a kick. <br /> <br />I had a bit of extra filling left so I stirred in some cooked pasta and baked it with just a bit of the Mexican blend cheese sprinkled on top. The pasta was a big hit with my toddler and a great way to sneak in some veggies.
