Oven-Baked Almond Fish Sticks

Ingredients

1 cup crushed almonds

1/2 cup crushed bran flakes cereal

1 tablespoon wheat germ

1 teaspoon sea salt

1/2 teaspoon garlic powder

1/2 teaspoon cayenne pepper

1/2 teaspoon oregano

2 large eggs

2 teaspoons olive oil

1 pound cod, rinsed and cut into 1-inch by 5-inch pieces

Prepared marina sauce, for serving

Directions

  1. Preheat the oven to 425 degrees F. 
  2. Mix the almonds, bran flakes, wheat germ, sea salt, garlic powder, cayenne pepper and oregano together in a medium bowl. Crack the eggs into a separate small bowl and beat until frothy. 
  3. Coat a baking pan with the olive oil. Dip the fish sticks first in the egg mixture, and then into the almond mixture. Place the fish sticks on the prepared pan. 
  4. Bake until lightly browned, 10 to 15 minutes. Serve with your favorite marinara sauce as a dip.

Made these fish sticks this evening and they were a huge hit with my husband and myself. I did change the recipe by using 1 cup bran flakes cereal instead of  1/2 cup and I used 1/2 cup almonds instead of  1 cup. I only used 1 egg and used vegetable oil spray instead of olive oil to spray on my parchment paper covered sheet pan. Anyhow, they tasted wonderful. Also since I didn't have marinara sauce I made tartar sauce, sriracha sauce, and we also had honey mustard sauce. My favorite with the fish sticks was the sriracha sauce. I just mixed equal parts mayo and sour cream and added a big squirt of sriracha.
