Oven Fried Chicken

Ingredients

6 tablespoons butter

2 chickens, cut into 8 pieces each

1 1/2 cups flour

1 teaspoon cayenne pepper

2 teaspoons garlic salt

2 teaspoons oregano

2 eggs

1/2 cup dried bread crumbs

Directions

  1. Preheat oven to 375 degrees. Melt butter in 2 x 9 x 13 inch baking dish. In a shallow bowl combine flour, cayenne, garlic salt and oregano. In another shallow bowl beat eggs. Dip chicken into flour mixture, then dip in chicken into egg. Roll chicken in bread crumbs. Place chicken in dish and turn to coat with butter. Bake for 30 35 minutes. Rotate after 15 minutes. Serve hot or at room temperature.

Well to start with, I'm only giving this recipe 3 stars because the cooking time is waaay understated here, unless you enjoy eating raw chicken. Eating raw chicken can cause SERIOUS health problems. <br /> <br />Moving on...I used this recipe for three bone-in chicken breast and there was no way that the seasoning portios or bread crumb portions is going to be enough for a whole chicken. My suggestion is add more seasoning and more bread crumbs. My version turned out great; I just used this recipe as a base to build on.
