Memphis Sweet Potato Fries

Ingredients

4 tablespoons olive oil

1 teaspoon paprika

1 teaspoon ground cinnamon

2 sweet potatoes, peeled and cut lengthwise into 1/2-inch wide strips

1/2 teaspoon salt

2 tablespoons brown sugar

Directions

  1. Preheat oven to 425 degrees F.
  2. In a large bowl, mix together olive oil, paprika and cinnamon. Toss the potato strips into mixture, to coat well, and spread onto baking sheet in a single layer. Sprinkle with salt and brown sugar.
  3. Bake for 30 minutes, turning every 10 minutes.

Wow! Very tasty, indeed. The combination of the savoriness of the paprika with the deliciousness of the cinnamon along with the awesome combo of sweet and salty with the salt and brown sugar mixture was a winning ensemble of flavors. Make plenty because they will go fast! I cut up several smaller sweet potatoes and had an abundance of the olive oil mixture left over. Be sure not to cut them too thin because they get pretty soft in the oven. I started on 425 then lowered to 375. I increased the heat to 450 for the last two minutes. I only had to bake them for 20 minutes. Serve warm and immediately.
