Prosciutto Wrapped Asparagus

Ingredients

1 pound large asparagus spears

2 tablespoons olive oil

Kosher salt and freshly ground black pepper

8 thin slices prosciutto, sliced in half

Directions

  1. Preheat the grill to medium-high heat.
  2. Trim the asparagus ends and put them on a sheet pan. Add the olive oil and sprinkle with salt and pepper, to taste. Toss to coat. Grill the asparagus until tender, rotating on all sides, for about 5 to 10 minutes. Remove them from the grill to a platter. When cool enough to handle, wrap each asparagus with 1 piece (about 1/2 a slice) of prosciutto. Serve immediately or at room temperature.

I wasn't paying full attention to the TV when the Neelys made this recipe, but when I had to make dinner for my parents, I gave it a shot. The only thing I did different was wrap the proscuitto on the asparagus before grilling for about 3 mins, so the asparagus was still a little crunchy and the proscuitto was a little crispy. It was perfect! The saltiness of the proscuitto cut the bitterness of the asparagus just right. My mom said she found a new way to love asparagus, and me, as someone who really isn't a fan, loved it! I'll defintely make this one again
