Sweet Bourbon Mashed Potatoes

Ingredients

4 large sweet potatoes, peeled

Salt, for water, plus 1/2 teaspoon for potato mixture

3/4 cup whipping cream

1/2 teaspoon cayenne pepper

1/4 teaspoon freshly ground black pepper

2 tablespoons molasses

6 tablespoons butter

1/8 cup bourbon

Brown sugar, for garnish

Directions

  1. Place the sweet potatoes into a pot of cold water with salt and bring to a rapid boil; about 20 minutes. Drain and return back into pot to mash.
  2. In a medium saucepan, combine the remaining ingredients, except the brown sugar. Allow to simmer over medium heat until butter is melted and mixture is creamy. Pour mixture over potatoes, adding a dash of salt for flavor and stir. Sprinkle potatoes with brown sugar.

I made this for our Thanksgiving dinner yesterday. It was indeed very easy and tasty. I made a few changes--used two large sweet potatoes and two large yams. I roasted them in the oven rather than boil and peeled them once they cooled a bit. I will definitely make this again. Thank you Neelys.
