Philly-Rito! with Sour Cream Cilantro Sauce

Ingredients

Sour Cream Cilantro Sauce:

1 cup sour cream

1 small bunch fresh cilantro, chopped

1 tablespoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Philly-Rito!:

3 tablespoons olive oil

1 yellow onion, diced

2 pounds sirloin, thinly sliced

1 tablespoon garlic powder

8 ounces shredded mozzarella

8 slices American cheese

1/2 jar roasted red peppers, drained, julienned

Salt and freshly ground black pepper

4 (12-inch) flour tortillas

1 avocado, mashed

Directions

  1. For the sauce: Mix the ingredients until well combined.
  2. For the Philly-Rito!: In a saute pan over medium-high heat, add the oil and onions. Cook until the onions are translucent, about 10 minutes. Add the sirloin and garlic powder and saute another 3 minutes. Fold in the cheeses to melt. Add the roasted red peppers and season with salt and pepper. Turn off the heat and set aside.
  3. In a dry skillet, warm the tortillas 1 at a time. Hold warm under a towel. To form the Philly-Rito!, spread a spoonful of the avocado onto a tortilla, top with a quarter of the meat and roll it up like a burrito. Serve with the sour cream sauce.

Too much salt in the cilantro sauce. Will try 1/2 tsp next time. Otherwise, it was good.
