Pimento Cheese Sandwiches

Ingredients

One 10-ounce package sharp white Cheddar

1/2 cup packed, jarred pimentos, finely chopped

1/4 cup mayonnaise

1 tablespoon brine, reserved from pimento jar

1 clove garlic, finely chopped

Kosher salt and freshly ground black pepper

Hot sauce, such as Tobasco

16 slices toasted whole wheat sandwich bread

16 slices tomato

8 leaves red-leaf lettuce

Directions

  1. Finely grate the cheese and transfer to a food processor. Add the peppers, mayonnaise, brine and garlic. Season with salt, pepper and hot sauce. Pulse until slightly chunky. 
  2. Top half of the bread slices with 2 slices tomato, 1 leaf of lettuce and 1/4 cup of the cheese mixture. Top with the remaining bread. Cut into triangle quarters and serve.
