Pizza Chipchos

Ingredients

10 cups ruffled potato chips

1 1/2 cups shredded mozzarella 

1/2 cup pizza sauce 

1/2 green bell pepper, diced 

1/2 red bell pepper, diced 

1/4 cup diced red onion 

15 slices pepperoni, quartered 

Pinch red pepper flakes 

Directions

  1. Preheat the broiler.
  2. Place one-third of the potato chips in a baking dish. Layer one-third of the mozzarella, pizza sauce, green peppers, red peppers, red onions, pepperoni and a pinch of red pepper flakes evenly over the top. Add half of the remaining chips in another layer on top, and then evenly layer half of the remaining cheese, sauce, vegetables and pepperoni. Finish with the remaining chips followed by the remaining ingredients.
  3. Broil just until the cheese melts. Serve warm.
